    It'll be a week or two before i have the empty fermenter space ( \m/ ) but next up will have to be either the adjunct lager or the vienna. After that, I'm leaning toward the english brown, but i'd also like to get a saison started.


    well, due to a low stock of base malt, the next one up is going to be that saison, then maybe a dampfbier if i don't manage to get the base malt stocked up again.

    apa is carbing, ipa is fermenting, and nut brown is measured out and ready to be crushed.

    now i'm starting to think about porters and stouts again.

    i'd really love to rebrew my bourbon oak porter, but i'd also like to take a crack at a coconut porter. i put together a recipe a while ago, but never got around to brewin it.

    also want a couple stouts ready for winter drinkins. i'll definitely brew my chocolaty stout again, but i'll also toss together an extract dry stout.

    oh, and i picked up a vial of wlp300, so hefe too.

    i need to update this more often. burnt honey porter is on tap and hefe is bottled and ready for drinkin. need to add ordinary bitter to that list, because i want one right now.

    maybe i can do a partial mash double beer. same grain bill, different hops, make up the gravity with dme. dampfbier and ordinary bitter.

    Long aged imperial stout. lots of oaky malty goodness. throw some special b in there and a truck load of crystal and age it until it pours thick like used motor oil.

    next up is 'light' lager since i have some very gelatinized rice that i overcooked by accidentand found a clone recipe for tiger. hopefully i can pull off a sort of double brewday and whip up a quick extract ipa while i'm doing that.

    and i changed my mind again. twice. i'm doing a 5 gallon mash with 8# vienna and 2# munich 10L. that's getting split into a helles, an ipa, and a batch of graff.

    next round will be a vienna lager and an oktoberfest (ale). hopefully i can get that underway two or three weeks from now.

    just enough time to have everything kegged and ready for a late octoberfest party. probably not everything, as i don't think i'll have enough keg space, but i'll still have a decent variety to choose from.

    I'm a cheapo, so instead of dumping anything i'll probably do a kitchen sink ipa or something to build up a yeast cake, then a max out my rig high gravity beer to use up all/most of the grains.

    At this point my grain is all ooooooold. The h ops a bit less so, but its time to restock everything with fresh.



    dumped 25% that smelled not great. used another 40% that seemed meh to make some hop extract. smells ok, tastes... strong.
