    A ris is great around Christmas time .... takes a while to age though .... should have brewed one a couple months ago ...

    ok, wit is bottled, but now i'll have to add my hopped up burnt honey golden ale to the list. that's gotta go next before my honey syrup sits around too long.

    so now i have stout and my belgiany type beer on tap. the cider hooch and the dark ale (burnt honey) kegged but not carbed, wit in bottles, and the golden colored burnt honey beer in primary.

    so i'm thinkin i need that alt fermenting next. i'll need to grab some two hearted so i can culture up some bells yeast for it.

    I'm very much into this as the proper terminology for a heavily dry hopped porter, though I feel "pail" would be more fitting, as "pale" has nothing to do with an African-American-Indian PA.... not that a pail does, but it's more confusion.

    HA HA HA HA HA, I just googled African American pale ale and it substituted Black and gave me beer reviews and recipes.

    i won't brew the stout again until i have the pale chocolate on hand. could go for the amber soon here.



    If you get that "stout itch," (in some cultures its fatal) but don't have pale chocolate, I would be happy to share a recipe for a little experiment I did -- a Wheat Stout with various types of wheat malt, and I pitched some hefeweizen yeast.

    i'd never say no to a new recipe and i've been wanting to brew a wheat stout ever since djsethall posted some videos of brewing one on his rig.

    after those, the weather should be turning warm enough to start brewing the lighter and hoppier stuff for the late spring/early summer season.

    i'm thinking that the amber is going to get bumped up the list. the weather this weekend should be warm enough to use my chiller, but cool enough to have optimal water temps. plus i can do another test run on my prechiller.

    evan b has got me thinkin about bumping up my soured wort beers to the top of the list.

    i'll need to grab some more DI water for either, so this weekend it's looking like i'll try my hand at a wheat stout, but next weekend i'll aim for either the soured wit or the more pislnery type soured lager.

    depending on how this sour experiment turns out I may apply the same procedure to a Dry Stout. I dunno why, but that just seems like it would work.

    a hint of sour in a stout could be good. probably depends on how much bitterness you are going to have from roasted grains. im thinking those flavors might clash.

    That's not a bad idea... Make a sweet milk stout or something low on roasted grains, not too dry.... A hint of sour in there might be good.

    the brown porter is kegged and waiting on the bourbon, the amber is in primary, and the esb was just killed.

    pine ale needs to wait until they start some new growth. thinking about using some juniper as well (not the evil little berries)

    dampfbier needs to wait until the soured wit gets underway, or at least until i get the yeast into a starter for the both of them.

    the alt is waiting on me to get that bell's yeast active and healthy, so it'll have to wait a while.

    i need to harvest some yeast for the hefe as well.

    so on deck will have to be:
    wheat stout
    apa
    soured wit
    schwarz
    o-fest

    wit is a fun one to do with people not familiar with brewing since there are so many different ingredients involved...

    When I can finally brew again I think I want to try a red rye IPA (though I am scared to even type that acronym any more after reading the discussion on IPAs).

    In addition to my Berliner Weisse experiment mk. II, oh and some Saison.

    I want to brew!!!!

    soysoon
    1-cheapo adjunct lager
    3-doppelbock
    5-shwarz
    6-veinna



    It'll be a week or two before i have the empty fermenter space ( \m/ ) but next up will have to be either the adjunct lager or the vienna. After that, I'm leaning toward the english brown, but i'd also like to get a saison started.
