Outer Banks Fish Cakes

   Fish cakes are a staple in the Outer Banks of North Carolina for Sunday breakfast. I managed to get a recipe while I was there on my last trip. They are usually served with fried eggs, home fries, and biscuits. They are seriously yummy.
 Any white, flaky salt water fish will do, but I ran into one guy that makes them with Bluefish, and serves them for dinner.
 OBX Fish Cakes
 1-pound fish filets
 1-cup chopped onion
 2-cups peeled and cubed potatoes, boiled until tender, and drained
 2-eggs, lightly beaten
 1/4 cup flour
 Salt, pepper, cayenne, parsley, dill (just a touch)
 Cook fish in as little oil as possible, until it flakes easily. Add onions to the skillet, and cook until translucent. With a fork, flake the fish, and allow to cool. Drain the potatoes, and let cool. Mix all together, and mash with a potato masher until mixed well. Add the seasonings, and the flour, and mix with a spoon. Place in the refrigerator for an hour. Form into fairly thin cakes, and fry in a half butter/half oil until golden brown.
 Never attribute to malice, that which can adequately be explained by stupidity.
