What to brew with these ingredients?

    10 oz Crystal 60
    8 oz Victory
    6 oz Midnight Wheat
    4 oz Crystal 20
    Enough Golden Light DME to start a Microbrewery

    8 oz Centennial leaf
    8 oz Nugget pellet
    5 oz Centennial pellet
    5 oz WGV

    I need simple for the BrewCast. I am not limited to this list, but using as much of it as possible would be nice.
    I'm thinking a WGV based bitter with a nice malty backbone or an easy drinkin' stout.

    I also have S-04, S-05, WLP001 and WLP005 handy. I'd rather use the liquid just to use it, the dry is kinda of my back up, hey I'm brewing this weekend and forgot yeast, yeast.

    Say 2 or 3 ounces of centennial for bittering and all of the WGV at 5 min.

    I don't know Kenny. That's why I'm asking you. Sounds nice though? Maybe split the hops up a bit from 10 minutes down to flame out?

    You mean the quantities or the hops? Or both? I've had 20 gallons of Centennial pale ale/IPA this year. My palate needs to see other hops for a little while.

    The WGV as a bittering hop would be a crime .... flavor/aroma heaven

    Just get drunk and start dumping stuff in. It'll be good. Just go light on the hops and it don't matter much what you use when. 90% of the time it works for me 100% of the time.

    So I just tossed this together based on Kenny's thougths (since no one else actually gave me a recipe input)
    Here's a couple questions...

    What do you think about the 005? I think I like it. I've only ever used it in stouts.
    I really have no Idea what a Vienna/Pilsner base is going to taste like. No idea.
    What about first wort hop? I think I'd like to finish around 50 IBUs.

    That recipe looks pretty good, I'm a fan of ESB type beers. I use a lot of 1968/002 in those styles, never tried the 005 to be honest.

    toss in the victory and maybe just an ounce or two of the midnight wheat too. i'm not a white labs brewer, so i'm not familiar with that yeast, but from the descriptions it sounds good.

    Not normally a fan of victory ... but it just might help this one out ... and yes to the midnight wheat .. if you had it, I would say toss a couple ounces of chocolate malt ...

    Need some advice, Gents.

    The beer hasn't started fermenting yet. So it's been 36+ hours. I thought the 005 was from the last brew day, but that was the Peeterman. The one before that was Centennial. According to the brew log the last time I used this yeast was April 14th. #-o
    So... Do I pitch a packet of S-04 in one bucket and the S-05 in the other? Or is there any chance there's enough 005 yeast left in those vials to make decent beer?

    I would give it another 12 hours or so ... and pitch the dry yeast ... I would think that it was viable, it would have taken off by now ....

    maybe, but you've essentially underpitched to the extreme. it won't ferment how you want it to.

    One airlock looked like there was a little pressure on it. The other nothing. So I pitched the dry yeast. Might have an interesting flavor profile if the 005 actually takes off.

    Drinking now. Well, the 5 gallons that was 'less' infected than the other 5 gallons. Not bad. It's basically a decent pale. Very much just above meh.
