    cane sugar works fine. like 3.4 oz I do believe.

    If its fuzzy, rack from under it, keg and drink quickly, I had some mold on a beer I brewed, it caught hold from a thief I forgot to sanitize, I racked from under it and kegged, it tasted fine but the last bit in the keg started tasting like dirt.

    Then bomb all your equipment with sanitizer, bleach, etc. maybe even replace the plastic bits, I had an auto siphon start growing ook in the rubber seal, tossed it before it got used and jacked up a batch

    you could always bring the whole mess back up to around 180 degrees and "harvest" the alcohol off (in steam form) and then drink tha......i mean, nothiiiiiiing. yeah.

    Did you ever mention which yeast you used? I have a Belgian red I am fermenting with roseleare yeast, it is souring now. It has brett in it. It looks pretty bad, weird bubbles and filmy layer but it is right on pace. If yours is supposed to look 'normal' then all other comments sound great. Buy a big glass boot and practice das boot chugging.

    Im a little late to this, but a disagree. The sweetness of unfermented wort can easily mask tannin bitterness.
