savory smoked chicken

here's a nice, easy smoked chicken recipe.
first, the brine:
1/2 gallon h2o
1/2 cup sugar
1/2 cup salt
1/4 cup lemon or lime juice
1/2 tbsp pepper
2 bay leaves.
1 bottle beer
this is enough brine for 2 chickens if you soak em in the large zip lock bags. i usually go for about 3-4 hrs.
now the rub:
2 tbsp onion powder
1 tbsp sugar
1 tbsp paprika
2 tsp parsley
1 tsp garlic powder
1 tsp oregano
1 tsp black pepper
1/4 tsp cayenne.
rub that bird (under the skin is best, but on top is fine) and smoke it with applewood for 2-4 hrs @220F or until 165F internal temp.
