for beer the darker, more strongly flavored honey stands up better against malt. for meads the lighter honey is a much safer bet because you don't generally want the mineral flavors from darker honey.

i woudl bet my left hand that you would like that kolsch more with a darker, stronger flavored honey.

all the beautiful, nuanced flavors the orange blossoms give off are covered up by the malt.

citrus honey makes killer meads though.

I think I can specifically taste the orange blossom in the kolsh. I'll try's future batch with a different honey and let you know.

Maybe try splitting the batch at that point and using two different honeys.
