burnt honey was finished last night. so here's the pics:
honey in the pot-
#2- just starting to boil, only took a couple minutes.DSC00405.JPG2592 x 1944 - 1MDSC00406.JPG2592 x 1944 - 1MThe pinnacle of lame and awesome in one singular moment. -Lake -
And here you can sorta see it getting a little darker. the color change is hard to see in the pictures.
in the second pic you can see where it started to pump out some smoke. that's when i cut the flame.DSC00409.JPG2592 x 1944 - 1MDSC00411.JPG2592 x 1944 - 1MThe pinnacle of lame and awesome in one singular moment. -Lake -
i split the batch into two portions, one i poured off when it reached the hard crack stage (300F) and the rest went up to 325F. you can see the color difference in these two pics.

and here they are after diluting with a little water to get it easier to work with. you can barely tell the color difference until you hold a light up to it.DSC00419.JPG2592 x 1944 - 816KDSC00418.JPG2592 x 1944 - 698KThe pinnacle of lame and awesome in one singular moment. -Lake

ok, i tasted it. the more amber colored one tastes like you would expect caramelized honey to taste. sweet and caramelly.
the darker one tastes like if you mixed honey with tea you made from chocolate malt. lots of flavor going on there. The pinnacle of lame and awesome in one singular moment. -Lake -
and i'm just starting the boil on this beer. no pics because the sun went down as i was heating strike water. brewing in the dark makes for crappy pictures. The pinnacle of lame and awesome in one singular moment. -Lake

I still prefer using cottage cheese, or ricotta in a pinch, I like how it chunks up in your glass.

"On it. I hate software." ~Cpt Snarklepants -
i really like the base recipe, but it could do with a bigger charge of late hops to really pull it together.
If i were to brew it again, i'd drop the honey, swap the base malt for an english pale malt variety, and give it an ounce of fuggles at 15 minutes. The pinnacle of lame and awesome in one singular moment. -Lake -
As far as the taste, specifically the burnt honey flavor, i'll do my best to try and describe it.
It lent a bit of a sweetish taste that was decidedly not malty, nor was it reminiscent of a honey sweetness. It had a very smooth, deep flavor that i feel would be perfect for a big aged porter. For having a sweetness to the flavor, it finished nice and clean/dry.
The flavors were similar to what you get from the darker caramel malts, but without the malt flavor to go with it. Dark toffee, slightly caramel but not roasty. On it's own the flavor isn't very impressive, but it does really well to round out the flavors of the darker roasted malts. It also meshes very nicely with the dry hop i added. The pinnacle of lame and awesome in one singular moment. -Lake -
I have been told that it tastes much like roasted marshmallows.......

It was as much like roasted marshmellows as honey malt tastes like honey. Kinda sorta similar in a way, but not really. The pinnacle of lame and awesome in one singular moment. -Lake -

i put the less burnt half from this round into a sorta not really pale ale recipe, but it turned out with more ibus than i had intended. it tasted like a nice ipa, so i figure i should take it in that direction net time. The pinnacle of lame and awesome in one singular moment. -Lake

go for it. after i restock my dwindling supply of base grain, i think i'll bump these next two burnt honey ales up onto the brew queue. The pinnacle of lame and awesome in one singular moment. -Lake -
so i'll probably do the burning of the honey this weekend. that should motivate me to get in gear with the porter and ipa. not sure when i'll get those brewed, but hopefully sooner than later. i want that porter on tap before it gets cold. The pinnacle of lame and awesome in one singular moment. -Lake

the lighter half went into a 2.5 gallon batch of ipa, so now i'm ready to use the darker half in a porter. The pinnacle of lame and awesome in one singular moment. -Lake
-
i'd like to get that brewed up this weekend, but current porter recipe needs some tweaks if i'm going to add the burnt honey. The pinnacle of lame and awesome in one singular moment. -Lake
-
i think i might just start from scratch and build it around the idea of the flavor profile you get from the burnt honey. The pinnacle of lame and awesome in one singular moment. -Lake
-
so i'm thinking a vanilla bean or two, the burnt honey (dark caramel/almost marshmellow sweetness), and a good amount of roasted/toasted malts to offset the sweet notes.
probably have to mash a little lower than i normally like. and aim for higher ibu's than i would have without the honey. The pinnacle of lame and awesome in one singular moment. -Lake -
