    haven't checked it, other than to add vodka to the airlock, in probably 3 months.
    i have a plan to bottle it soon, maybe even this weekend.
    i need to pull a sample off though and see if the puke scented aromatics are gone.

    i will check it tomorrow. after brewing 10 gals and working up a new run for chickens today, i am spent.


    did i mention i am hungover like a bastard? its pretty bad.

    noticed i had never updated this. The pineapple wine is freaking phenomenal. lightly flavored, beautiful color, tangy.

    damn. ok, well it was 2.5 gallons of pineapple juice. i know that for sure. then 71-b yeast, that's a fact too.

    Then, with the water needed to bring it up to 5.5 gallons, i added some honey. all i remember was that it wasn't too much, probably 4-5 pounds.

    might have been a tablespoon of malic acid in there too.

    then after a month or two in primary, age in secondary for a year. don't smell during this time unless you like the smell of vomit.

    do not use a different yeast unless you want to risk the whole batch. The 71-b was chosen for its ability to metabolize acids and drop the pH naturally. most other wine yeasts will not accomplish this and it will always smell like gross ass puke

    K1V or maybe d-47 would be my second choice, but it just don't think it would clear all the vomit out.
