    Made a cheater quiche of sorts,

    3 cups of diced zucchini
    1 cup bisquick mix
    1/2 cup shredded mozerella cheese
    1/2 cup chopped onion
    1/2 cup vegetable oil
    4 eggs beaten
    1 or 2 cloves minced garlic
    1/2 tsp dried parsley
    Salt and pepper

    Mix everything together and pour into 9x13 baking dish

    Bake at 350 for 30-45 min till golden brown and cooked through.

    I've added crumbled bacon to this with great results, its quick to prepair so we often do it when having friends over, cut it in squares and serve as an appetizer. I've cut into squares and then drizzled some Mexican crema over the top, fantastic!

    This is crazy quick to prepare and make, all summer I have fresh zucchini in the garden, I always have a box of bisquick in the pantry, so if people are coming by on short notice, I can pick some zucchini and have this baking in no time flat

    Hmmmm..... I'm likin' this idea ....
    the old lady makes "real" quiche .... in pie crust .... I normally get stuck rolling out the crust cause I do a purdyer job crimping the edges ..... I'm going to suggest your stroke of genius ....
