    1 lime juiced (if you have extract it's 1 tbsp)
    cracked black pepper to taste
    Kosher salt to taste
    chili powder to taste or cayenne (for hotter)
    fresh cilantro or parsley to taste (cilantro is better)

    In a bowl combine the olive oil and the lime juice with the chili powder, salt and pepper and wisk. Then add all of the other diced stuff. I usually add another big pinch of kosher salt at this time.

    Peppers: You can add more jalapeno's here if you want it hotter or other type of peppers. I also use sweet bananas. Chipotle's are also great to add just a bit smoke flavor.

    You can add other stuff too like corn or black beans.

    It's a great fresh salsa. Really proves with an overnight marinade.

    We're going to add corn. We have too many tomatoes to eat while fresh, so we're also going to freeze some. Hopefully that works out.

    I love salsa fresco ...... this is very similar to what I do ... and sounds yummy

    Wifey just finished with this. It's yummy now. And kinda hot :)

    Wow, my recipe is quite similar!

    6-8 Roma tomatoes diced
    1/2 yellow onion diced
    4 cloves minced garlic
    4 Anaheim chilis diced
    2 jalapeños minced
    2 key limes juiced
    Black pepper to taste
    Chicken bullion cube crushed up or granules (instead of salt)
    Shot of tequila
    Chopped cilantro
    Jesus didn't wear pants

    Wow that looks good. We are running out of tomatoes. It's ok though cause I'm tired of making salsa. I was probably making it twice a week there for awhile.
