The first time I brewed this, I let the mash slip into 152 degree territory and it ended up too dry with too much hop character. If your mash runs a little low, I'd recommend reducing the IBU's to maintain balance. When kept at 154 or 155 the beer is pleasantly chocolaty without too much residual sugar. Looks really tastey! I'm assuming the wheat is in there for head retention more than flavor. Have you ever brewed this without the wheat?The only thing between me and a train wreck is blind luck..... - Kenny

The CaraPils is there for head retention. I feel like the wheat adds a little creaminess to the mouthfeel but I haven't brewed this specific recipe without wheat. Either way, the head retention is pretty ridiculous. Haha
