    Mash Temp: 154 Degrees F
    Yeast:  Wyeast 1056 Slurry (House Yeast)

    Recipe Calculated at 75% Efficiency for 5 gallons.

    Grain Bill:
    2-Row   8 lbs.  72.7%
    Malted Wheat 1.25 lbs. 11.4%
    Crystal 80   .5 lbs.  4.5%
    CaraPils .5 lbs.  4.5%
    Chocolate .5 lbs   4.5%
    Pale Choc. .25 lbs  2.3%

    Hops:
    Galena .7 oz. 10.1% aa. 90 min.  23 IBU's
    Cascade .5 oz.     5% aa. 30 min.    6 IBU's
    Cascade .5 oz.     5% aa.  5 min.     2 IBU's

    Be careful not to mash this one too low.  The first time I brewed this, I let the mash slip into 152 degree territory and it ended up too dry with too much hop character.  If your mash runs a little low, I'd recommend reducing the IBU's to maintain balance.  When kept at 154 or 155 the beer is pleasantly chocolaty without too much residual sugar.  Happy Brewing!

    Looks really tastey! I'm assuming the wheat is in there for head retention more than flavor. Have you ever brewed this without the wheat?

    The CaraPils is there for head retention.  I feel like the wheat adds a little creaminess to the mouthfeel but I haven't brewed this specific recipe without wheat.  Either way, the head retention is pretty ridiculous. Haha

    I think I'll be brewing this soon too. If I can get the time to brew soon.

    Maybe I don't want a stout so much as this. Or a very close tweak on this. Drop the chocolate, or one of the chocolates and keep the mash on the lower side of recommended. Maybe 153?
