Help with a Hop Substitution for Amarillo

    Going to brew my Black IIPA this weekend and need to substitute the Amarillo for either Cascade or Centennial. I am leaning toward Cascade mainly becuse centennial is already on the schedule but wanted get someone elses opinion based on hop schedule:

    15 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 88.6 %
    1 lbs Carafa III (525.0 SRM) Grain 2 5.7 %
    1 lbs Caramel/Crystal Malt - 60L (60.0 SRM) Grain 3 5.7 %

    3.00 oz Magnum [14.00 %] - Boil 60.0 min Hop 4 108.7 IBUs
    2.00 oz Amarillo Gold [8.50 %] - Boil 1.0 min Hop 5 1.9 IBUs
    0.50 oz Centennial [10.00 %] - Boil 0.0 min Hop 6 0.0 IBUs
    2.00 oz Amarillo Gold [8.50 %] - Dry Hop 5.0 Day Hop 8 0.0 IBUs
    2.00 oz Centennial [10.00 %] - Dry Hop 5.0 Days Hop 9 0.0 IBUs

    I'll think about this a bit today. I haven't used much Amarillo so I don't know off the top of my head what would work. My gut says a blend. Are Centennial and Cascade all you have to work with or are there some other options in the fridge?

    Those are what I have in the freezer. And based on the substitution chart those are two that are recommended. I pick up my order today so I could always ask the guy for the Amarillo or something else.
