Have you ever had sourwood honey? I like it. It is lighter colored than to tulip poplar honey quite common to this area. I'm no mazer(isn't that what a mead maker is called), but I think it would be good. Maybe even with a very, very, very light vanilla bean infusion.Sign here______________________________

If you really want to go with the peaches, use a really cheap honey ... the fruit will just cover up all the awesome subtle goodness of the sourwood stuff ... just my opinion ...Never attribute to malice, that which can adequately be explained by stupidity.
