    they say that the diet of the bees affects the flavor of the honey, but orange blossom honey is the only one i've had that you can tell the difference.

    Fry was pretty clear to use very light honey in the easy mead recipe. And he knows biology!

    the diet effects, the flavor and color in a huge way. think spring honey (clear and lightly flavored) and fall honey (dark and minerally from goldenrods)

    for beer the darker, more strongly flavored honey stands up better against malt. for meads the lighter honey is a much safer bet because you don't generally want the mineral flavors from darker honey.

    i woudl bet my left hand that you would like that kolsch more with a darker, stronger flavored honey.

    all the beautiful, nuanced flavors the orange blossoms give off are covered up by the malt.

    I think I can specifically taste the orange blossom in the kolsh. I'll try's future batch with a different honey and let you know.
