    Does this convert OK? It was always my understanding that wheat malt lacks the enzymes to convert itself. Does the carapils have enzymatic ability?

    From my recipe formulations, wheat does indeed lack enough enzymes, the reason my hefe recipes include a pound or two of 6-row is two fold, the uber enzymatic properties, and it adds a nice bready note to the beer.

    As far as I know carapils lacks any enzymes to convert itself
