    its all in the accuracy and the 29 dollar one and the 39 (?) dollar one are both not accurate enough for wine making. .3 pH and .2pH respectivly is way too big of a gap.

    the 75 dollar one is plenty accurate though

    I don't make wine, would the mid level one work for simple mash ph, and simple things like verifying my star San is still good?

    yeah, the cheaper ones would be fine for that kinda stuff. even most wine making its fine for, but when you get into white wines, meads, and ciders, you really need to be precise because any little deviation is readily apparent.

    tons of room, but for cold to low smoking you can only use the half the main grill, the other half gets too hot. \

    still tons of room though. most i have ever smoked on it was 45 pounds of dry cured ham, that's also what i make all my bacon on.

    I assume you mean the side nearest the firebox is to warm to cold smoke, even with the flue open and the damper closed?

    Yeah, that makes sense. I didn't really buy it to cold smoke with, I have that small vertical smoker for cheeses and stuff. Though I figure I could do some stuff on this one too.

    some things you want to cold smoke for awhile first though, like fish and bacon, and then ramp up the heat for the final hour to finish it.

    old yeast for half price. it might be a crap shoot to see if it's viable or not, but i have to imagine that most of the homebrew shops around here have had the yeast sitting around that long anyway. produced in feb 2012, but for half price, why not grab a few?

    they also have amarillo for $22/ lb. (2010, though)

    midwest supplies has a white burgundy wine kit as buy one get one free. that's a pretty tremendous deal. saves over 50 bucks. kits has good reviews too. i ordered them. if you have some extra fermenter room, pick em up. white wine is very different than red in that it is mostly meant to be drank young and therefor it is perfectly fine to bottle it in beer bottles with crown caps. you can keg it easily too for a sparkling white wine.

    shipping is about 20 bucks, because these things are heavy, but you're getting close to 3 cases of wine (per case), which makes it really really cheap still.
    comes out to over 5 cases of wine for a litte less than 80 bones.
