    I'm a cheapo, so instead of dumping anything i'll probably do a kitchen sink ipa or something to build up a yeast cake, then a max out my rig high gravity beer to use up all/most of the grains.

    If I was going to brew a German wheat beer, I'd go really old school, and do a 50/50 mix of 7L Munich Malt and Red Wheat Malt, with a tiny touch of Chocolate Wheat for some color, and use an Alt yeast.

    I've made lots of good beer with dry yeast just tossed in top. I think most of those packets actually say 11 gallons. Rehydratate in some water or wort or chuck in top and go. Whatever.
