My next IIPA

Basically, I am using the grain base for Avery Maharaja and some of the hop schedule. However, I tried to use the hops I already had in the freezer so I had to change the recipe up quite a bit. Also, I got a lot of whole leaf simcoe hops. Which is cool because now I guess I can call it mine. Next time I may change the grains as well. Here is what I am doing:

    The original:
    Boil Size: 6.93 gal
    Post Boil Volume: 6.24 gal
    Batch Size (fermenter): 5.50 gal
    Bottling Volume: 5.50 gal
    Estimated OG: 1.089 SG
    Estimated Color: 10.5 SRM
    Estimated IBU: 90.7 IBUs
    Brewhouse Efficiency: 85.00 %
    Est Mash Efficiency: 92.7 %
    Boil Time: 60 Minutes

    Ingredients:
    ------------
    Amt Name Type # %/IBU
    15 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 93.8 %
    8.0 oz Caramel/Crystal Malt -120L (120.0 SRM) Grain 2 3.1 %
    8.0 oz Victory Malt (25.0 SRM) Grain 3 3.1 %
    2.00 oz Simcoe [13.00 %] - Boil 60.0 min Hop 4 64.1 IBUs - Sub with Cascade or Magnum
    1.00 oz Columbus (Tomahawk) [14.00 %] - Boil 30. Hop 5 26.5 IBUs - Sub with Chinook
    2.50 oz Simcoe [13.00 %] - Boil 0.0 min Hop 7 0.0 IBUs
    2.50 oz Centennial [10.00 %] - Boil 0.0 min Hop 6 0.0 IBUs
    4.50 oz Simcoe [13.00 %] - Dry Hop 3.0 Days Hop 9 0.0 IBUs
    2.50 oz Centennial [10.00 %] - Dry Hop 3.0 Days Hop 10 0.0 IBUs
    2.00 oz Crystal [3.50 %] - Dry Hop 3.0 Days Hop 11 0.0 IBUs2.0 pkg - Sub with Chinook
    California Ale (White Labs #WLP001) [35. Yeast 8 -

    That looks good.
But, don't you think you should put some hops in there???

(good god, that will be a hoppy SOB!)

I'm not a real fan of Simcoe, but the combination of everything sounds awesome.

you have no flavor hops in there, if i am reading that right.
you'll get some flavor off the dry hopping, but not much and with caramel 120L in it you will have strong sweet malty flavors...not generally what you're looking for in a IIPA, but if it floats your boat, go for it.
i would dial back the bittering hops by 40% and then make up for it in the 10 and 20 minute time frames to bolster the flava!
    gots to have mad flava!

although, i have started skipping bittering hops altogether recently and dont' add any hops until 25 minutes......when i begin to add A LOT!!!!

unless he can batch chill the entire volume in less than 10 minutes, the 5 oz at t-0 will end up producing a lotta flava.

yeah, but deriving all your hop flavor from flamout additions makes it kind of one dimensional. a IIPA shoudl be complexy hoppy in my book.

then it may be too bitter....but if you want to run that risk, go for it

No. Tell me a little more. Do I drain the first runnings and then add hops?

Yep.... just toss the hops in to your first runnings... let them sit until the boil.

So toss them in then take them out at the beginning of the boil? Or use a portion of the 60 minute addition for this, then leave them in for the boil?
