Rye IPA

    I'm going to brew again in about a week and I am thinking rye IPA and another porter or a sam adams summer ale kinda thing with some lemon zest and grains of paradise. But I'll make another thread. This is what I have:

    I'm not opposed to ordering something else but I feel like this should do it. About 6-8%abv is fine. Going for taste not drunk. I wouldn't mind having some good head as well.

    Recipe Details
    Tasting Notes malty doppelbock with the familiar rye spicyness of a roggenbeer.
    Awards I've had requests for the recipe.
    Boil Volume 5.00 gallons
    Boil Time 180 minutes
    Batch Size 2.50 gallons
    Yeast Saflager S-23 (75% app. attenuation)
    Primary Fermentation glass 7 days
    Secondary Fermentation glass 62 days
    Other Fermentation dryhop 30 days before bottling, 1/4 oz. Perle
    Procedure 1 qt. per lb. Infusion mash at ph 5.2 at 150f for 40 min.- add 1 gallon 195f water to thin mash for 30 min. more.- Sparge at 170f to collect 4 gallons Boil for 3 hours adding hops as directed.

    Thanks lothos. I should add a couple of things to show my limitations tho. OG 1.09 is just about my limit for my system. I suppose I could make smaller batches but really don't like going that route because the return on the time investment goes down. I'm limited because my system is Biab and I just can't lift much more wet grain than what it takes to make a 1.09ish beer.

    Id make it light on the ABU drop back on the chinook and the centennials. Replace them with saas or UK KG

    i'd probably play with the hops a bit. move everything later and sneak in some tropical varieties. drop the ibu's a little, but as long as it's balanced well against the malt backbone, ibu's don't bother me.

    I am thinking around 50-60 IBUs.

    I am kinda stuck with what I have now.

    What would this make in the right proportions?

    golden promise 9lbs
    flaked rye 1lb - 1.5lbs
    crystal 60 or 120 .5lb-1lb
    aromatic and/or victory and/or vienna .5lb-1lb (I really dont know what flavors these impart besides looking at the beer wiki malt chart and tasting them)
    small portion of unmalted wheat for head

    for a 1.065-1.070 OG

    Hop schedule to be determined.

    I'm about to make a vienna smash... i cant remember how much I have of a lot of this stuff but I have a lot of vienna. and a good amount of victory too I believe.

    So this turned out really freakin good. Say I used basically this same recipe with 1.5lbs of flaked rye or more or less. Would this be good? maybe take away the crystal malts? I like SN ruthless rye ipa and widmir brothers rye ipa. they both are brown/red in color. how close would this be?

    Do you think I could use all golden promise and forgo the MO? I know what I made this time is good but I get the feeling that Golden Promise is between MO and Two Row.

    you could. i would expect a bit of a change in the malt flavor, but not in detrimental way. just different, a little softer malt charecteristic

    Someone else may correct me here, but those two malt have pretty strong, distinctive flavor profiles. I think they may hide the earthy rye flavors and keep them from developing properly.

    The numbers were exactly as planned. I dunno about the taste yet. I brewed it a week ago.

    I would let it go three weeks in primary if you can. If not two will work.

    I'm not gonna secondary it. I'll probably leave it in primary for a month. I have some others that need bottling. I want to bottle my first porter that I want to bottle and let age a bit, and I have a regular ale thats a MH #9 clone that needs bottling. I have that "anthracite black ale" that probably could be bottled as well. Its been going about a month now I think. It will be 5 weeks in a week I believe.
