my kickazz cider

    5 gal 100% apple juice
    3 LBs corn sugar
    2 cups splenda
    2 bottles agave nectar
    4 cinnamon sticks
    3-4 cloves
    4-6 allspice
    1 pkg red star cider yeast yellow pkg

    mix it up
    cover
    install airgap
    let it ferment
    usually around 1 1/2 months
    bottle using swing top bottles ONLY
    3/4 sup sugar for primming
    or keg no primming needed
    force carbonate at 25 psi for 2 days

    but it is better with age so id bottle

    anyware form 14 to 18%

    and there it is

    with 3/4 cup corn sugar, why swing tops only?

    i would assume it is for higher pressure, but 3/4 cup won't make enough pressure to break a regular bottle unless you bottled above 1.100 and even then, with a generic cider yeast that doesn't dry things to the bone, it probably wouldn't break them.

    sounds like you are not done fermenting. you should be though at 1.5 months with store juice. unless its too cold or something crazy, but i doubt that. a seondary can greatly improve ciders. helps increase body also once you get it into the secondary to disturb the fine lees every month for a few months. most store juice ciders lack any real body and this can be a n easy fix for that.

    probably want to use 2 packages of yeast also. aren't red star packs around 3 grams or so? that would speed up the ferment too.

    Interesting. This looks like a good one to set in a carboy after a month primary and forget about it for six months.

    I usually leave it in the primary till its done fermenting than move to secondary air gap it and let it sit for 3 months before bottling than set it on the back shelf for 2 years.

    So I make a batch every 8 months

    I would need a logistics coordinator for that. I'm doing good to have more full kegs than empty taps. I barely put more effort into it than that.

    My last apple wine was 4 or 5 gallons of juice and 6 or so cans of concentrate. I need to look back at the numbers on that one so I can pump it up a bit more for next time. I'd like it to stall out sweet, but not too sweet.
