Well it's 6 gallons of wort that is pressure canned to be used for starters at later dates. Basically the main benefit is the starters for my brews take basically no time when i need to make them (time spent up front making and canning the wort.) The second benefit is I feel the yeast is healthier for it due to the break material in the starters from the all grain vs extract starters.

We all thought this and thought @mors was going pro-scale. Turns out, he's just better at planning.

It's basically a high acidity beer with some brett in it that you use for blending. You can make a beer a little more crisp with it, make it tart, or turn it into a full on sour beer. Each time you use some of it you top it back up with some more.

huh. I've not heard of this. Are there styles that use this process typically?

No styles per se. But beers have always been blended (though usually the sour beer was blended with young non sour beer to be less sour). Really though it's just a way to add tartness and complexity to beers.

That's pretty interesting actually. I've made a few beers before that could use a little tartness to brighten them up. I never thought of having a blending beer on hand. You ought to put together a thread showing what you do. That would be really neat.
