How fast does apple juice take to ferment?

    I added 5 gallons of Apple juice to a Nottingham yeast cake.

    I thought maybe I should use a blowoff tube so a couple hours later I switched from an airlock to a blowoff tube, I saw yeast swirling around already so I know fermentation started....

    I checked in on it the next day after work, about 22 hours after adding the apple juice and there was no activity, the juice was quite hazy and there were a few bubble rafts on top but there was a big cake on the bottom, nothing from the blowoff tube in the way of bubbles, and no ring that indicated some sort of krausen buildup.

    Could it have fermented out that fast? It was in the ferm chamber at 60 degrees the whole time.

    Yep ...with Notty, I would guess around 1 with a bunch of zeros...

    Regardless of where it will truelly finish, a gravity sample will tell you if it fermented, stalled or never really started.

    If its below 1.005, it fermented.....

    I guess I could move it to the basement floor in a corner and start a second batch with my cheap juice. Maybe add in some dme? There is a name for that I'm sure, but no idea what, I'm a cider noob.

    Aside from some Apfelwien that I forgot for near 2years, it's my first cider foray.

    The graff I made was similar. Second runnings/partyguile of a Barleywine with 2 g of apple juice on a Nottingham yeast cake. Turned out okay. I back sweetened some with honey, tasted better. It was very dry.

    careful racking into a keg and a fairly flocculant yeast strain. fridge temps keep it from doing much of anything.

    Well feck, I was thinking I would need to break out the chemistry set..... That's simple enough for me!


    If you want to pasteurize it drop the keg in you boil kettle full of boiling water and cut the flame. Take a temp of the water ten minutes later and if it's 10f or more above a yeast kill step your done. If not repeat with it pre warmed or with the flame on for a little bit, it'll likely work the first try.

    Or you could build a continuous flow pasteurizer. Basically a small counter flow chiller with a place for thermometer so you know it's working.
